Because, now, stable points to Buster. Whereas our OBS packages are tested on Stretch only.

Also, set repository host to the generic deb.debian.org host

tbh we should get rid of the debootstrap entirely and base on official deboan docker images; Also the @sudo here is an obvious no-go
