Update plugin dependencies, etc.

Description

  • Bumped mattermost dependencies
  • Changed plugin version from 1.2.0 to 2.0.0
  • Updated Go image versions for building, etc in gitlab ci
  • Some code simplifications

How tested

  • Pipeline passing (although plugin lacks unit tests)
  • Built and deployed to dev and test MM servers - functionality working as expected
